It's hard to imagine anything local and organic growing under Pops for Champagne, yet underneath the glitzy bar there has sprouted out of fertile soil a relaxed little lounge. Since opening in Pops's basement in 2010, Watershed has served almost exclusively local beer and cocktails, sourced from the watershed of the Great Lakes and environs. There's Minnesotan vodka, Wisconsinite saki, a variety of organic liqueurs from Chicago's Koval Distillery, and even tart cherry wine from Michigan. It can be a tad pricey, but consider the extra money runoff to be reabsorbed into your mixological ecosystem—or just be thankful that the financier regulars upstairs don't seem to know or care what they're sitting on.
