Chicago location of the venerable California doughnut chain.
I used to envy people in LA because they lived in the Doughnut Capital of America and I lived in the land of Dunkin' Donuts. But now Chicago is the land of Firecakes and Do-Rite Donuts and the Doughnut Vault, among many others, and I don't feel bad anymore. But maybe LA does, because it just sent us our very own outpost of Stan's Donuts, its 50-year-old institution. And plopped it down right across the street from the Wicker Park location of Glazed and Infused. If that's not a direct challenge, I don't know what is. Stan's doughnuts are slightly smaller and less costly than the ones at the gourmet Chicago shops and way more expensive than those at old-school places like Dat Donut. They're baked throughout the day, so they're always fresh. The most basic doughnuts are the best: the plain glazed is light and airy and just sweet enough, while the buttermilk has a nice tang. The defects are relatively minor: a dry cake doughnut, an apple fritter that's more fritter than apple. They're doughnuts for God's sake! It's churlish to complain about something so wonderful. And yet, being critical feels like a form of civic pride. You can have your doughnuts, LA. We've got our own.
