Well, gosh, no sooner does Fahrenheit/Spiaggia vet Pete Balodimas settle in at Evanston's Quince, "executing an ambitious menu" and "unexpected juxtapositions," as Kate recently put it, then he's up and gone.
The restaurant recently confirmed what Balodimas has been hinting at on Facebook since the beginning of July.
He's moving to Phoenix with his girlfriend, who just got a promotion and transfer. He splits Monday to get settled, then returns for a short stint August 24 through September 5, during which he'll be preparing a special three-course dinner with cocktail pairings ("tuna nachos with watermelon margarita," "white chocolate-lime semi-freddo with cucumber limeade," etc ).
The restaurant is currently conducting tastings to find his replacement, and Balodimas says if you know anyone in Phoenix who needs a chef, he's looking for work.
