Video: Phillip Foss vs the Asian carp



My story for the Asian carp package in this week's Reader, on Supreme Lobster fishmonger Carl Galvan's attempt to convince ten chefs to work with Asian carp, saw a lot of seasoned cooks edge away from the beast. Not Lockwood's Phillip Foss, who was a hell of a good sport in allowing me to record his first attempt at butchering the fish. Foss's own blog post about his epic struggle is worth a read too.
