If there's anyone in this town who knows what to do with seasonal veggies it's Cassie Green of Green Grocer Chicago. She's a champion of searching out produce from local farmers to ensure her little shop on Grand is well stocked. And what do you do with that fresh produce? Cassie's conducting a cooking demo with three recipes at the Kenmore Live Studio (678 N. Wells) on Thursday, May 19, at 7 PM. It's free.

Can't make it to the demo? Cassie shares this recipe:

Roasted Asparagus With Lemon Vinaigrette (serves 4)
1-1 1/2 lbs asparagus
1/8 c olive oil
sea salt and pepper
1/8 t brown mustard
2 T olive oil

Preheat oven to 375 degrees.
Rinse and snap woody ends off of the asparagus.
Lay it onto a cookie sheet and drizzle with the 1/8 cup olive oil.
Sprinkle liberally with sea salt and pepper.
Toss to coat asparagus and put it in the oven for 10-15 minutes (depending on thickness of stalks), until moist but still firm.
Meanwhile, squeeze the juice of a half a lemon into a bowl, then whisk in the mustard and more sea salt and pepper.
While continuing to whisk, slowly add the 2 T olive oil.
Once the asparagus is roasted, put it on a platter and drizzle with the lemon vinaigrette. Serve warm or at room temperature.
