But it is sort of curious that Vosges Haut-Chocolat's Katrina Markoff chose this particular combo to star in the creation myth of her mass-market chocolate bar line Wild Ophelia, which she launched last spring with a gypsy Stevie Nicks-style mascot that looks quite a bit like Markoff herself. According to the boilerplate, in childhood Ophelia ran a "sweet stand" at garage sales in the summer and hit upon dipping strips of beef jerky in sun-melted chocolate.
Can you get that without flies? Yes, you can. The jerky is almost granulated and suspended within the thin two-ounce bars, lending a nice chew and plenty of salt (also from Worcesterhire). At $3.99-$4.99 per bar it's an affordable way to access the talent behind pricey Vosges, whose three-ounce bars can run up to $9 in some outlets. You can find these in stores as varied as Whole Foods, Binny's, Cost Plus Market, and Candyality, along with the other flavors in the line like hibiscus and peach, barbecue potato chip, and peanut butter and banana.
In other Vosges news, Markoff is building a "Temple of Chocolate" in Logan Square and an "education center at a cacao plantation and eco-lodge in Belize."
