• Food Republic's Jason Kessler (whom you heard if you caught this episode of my podcast) hit pay dirt when he solicited a "10 Things I Hate" column from Nightwood's Jason Vincent, whose acerbic list is dead on. A sample of his answers: "Stages. Specifically the ones who, when asked why they're leaving the place that they're working at, reply with a laundry list of complaints that, to me, sound like a good description of being a cook."
• Serious Eats Chicago's primer on the weird regional specialties of Chicago, from Italian beef to flaming saganaki. Be sure to read the comments for more hyperregional specialties (like Joliet's po'boy sandwich).
• New City's no-illusions paean to the south side, which name checks a few restaurants you should have been to by now.
• Food Revolution Chicago, whose personnel changes I wrote about here, launched its premiere episode at NBCChicago.com earlier this week. It's a visit with Letherbee Gin's Brett Engel, and there's some interesting content in the five-minute video from Engel. But if the point of replacing the two chefs who were going to do the show with host Megan Weinerman was that her everywoman outlook was more accessible to viewers, well, the price is that she doesn't have much to say or ask of Engel.
