Austrian Wine Dinner

Quince reprises an Austrian wine dinner it served a few months ago, the result of a collaboration between chef Andy Motto and wine director Scott Quint. Motto’s three courses, paired with Austrian wines, are gratin of oyster with cucumber, chilies, spinach, mushroom, apple, and water chestnut; venison with juniper, chestnut, cranberry, eggplant, and pumpernickel; and “trio of brie” with honeycomb and pear for dessert.
