Northwestern PhD candidate Michaela DeSoucey lectures on her dissertation Gullet Politics: Foie Gras in the U.S. and France, a comparison of political and moral debates that have occurred in the two countries (and, famously, in Chicago) over the question of the fattened duck liver. She's especially interested in activists' use of foie gras as an "easy target"--a bit of rhetoric that DeSoucey says pervaded animal rights criticism of the food, but also galvanized resistance to its ban.
