Gabby Abrazaldo, center, said she got emotional while watching Filipino-American performer Ruby Ibarra. "I remember as a kid, I used to hate having brown skin," Abrazaldo said. Turon, deep-fried bananas wrapped in spring-roll wrappers, are a common afternoon snack in the Philippines. The turon cupcakes from Maddy's Dumpling House were made of banana cake with caramel icing topped with a cripsy turon wrapper.

Phoenix eggs are eggs hard-cooked and marinated in soy and squid ink. The yolk is mixed with pickled mustard seed, calamansi, and garlic. They're topped with chile powder and fish sauce caviar.
