Choices include chestnut soup with oxtail and black truffles; a roasted red kuri squash salad with serrano ham, walnuts, and arugula; farro risotto with foie gras and wild mushrooms; seared scallops with lemon, chives, and chervil; braised Wagyu short ribs; and a poached pear with mascarpone cream.
