Two seatings featuring chef Rick Tramanto’s multicourse tasting menus: the Market Collection, which features prosciutto-wrapped prime beef rib eye, whipped raclette, cornichon pearls, paprika jus ($225) and the Black and White Truffle Collection, every course of which features the fungi ($300). Tramonto’s caviar “staircase” ($300) or five ounces of grilled Japanese Kobe beef ($175) may be added to either menu. At the first seating only, from 5 to 6:45 PM, a three-course prix fixe menu will also be available ($110); the second seating is from 8:30 to 11 PM and includes a champagne toast at midnight.
