Prepared by chef Randy Zweiban and inspired by local purveyors Seedling Orchard and Three Floyds Brewing, four courses at a prix fixe dinner tonight at Province include a salad of gala apples, jicama, candied olives, Marcona almonds, and apple cider vinaigrette; beer-steamed mussels with chorizo, onions, and apples; pork ropa vieja with braised apples and cabbage in apple cider mojo; and ginger-apple bread with pear swirl ice cream and pear cider caramel.
