When the lease on Shallots' Lincoln Park location expired a few years back, owner-chefs Laura Frankel and Dennis Wasko packed up their kosher kitchen and moved it to Skokie. Now under new ownership and a new executive chef, Gustavo Restrepo, the restaurant remains rigorously kosher. Restrepo has added some global touches to the French bistro fare and steaks: alongside beef bourguignon and poulet au vin are chicken Marrakesh and a seared duck breast served with polenta, bok choy, and pomegranate "lacquer." Keeping a kosher kitchen isn't cheap: a rabbi must inspect the kitchen regularly as well as all the food that comes from it -- even using a light box to check every leaf of lettuce for insects, which aren't kosher--and most entrees run in the 30s.
