The Bittersweet History of Chocolate in France All Ages

Sugar artist Mark Seaman discusses chocolate in France in a Culinary Historians of Chicago talk that's part historical survey, part palate education. Attendees, who receive as "reference materials" a sampling prepared by the French Pastry School, will learn about how the stuff goes from bean to bar, meanings of types and terms (bittersweet, single origin), and stories of the chocolatiers who indulged members of the French monarchy.
