Theodoros Vatistas, the president of the winery, provides commentary and answers questions on the wines. Selections include: house-made phyllo stuffed with ramps and goat feta paired with Vatistas Malagouzi; and Constantinople-style smoked mackerel with grilled asparagus, parsley, shallots and capers paired with Vatistas Petroulianos. $45 (includes pairings).
