Veggie-Deprived PETA People

Dear editor,

Anne Ford's article about Veggie Bite, the vegetarian fast-food restaurant in Mount Greenwood [Section 2, January 12], made me want to hop a plane to Chicago for a meal. The food sounds scrumptious, and unlike traditional fast-food fare---hamburgers, chicken nuggets, and milk shakes---plant-based foods are cholesterol free, low in fat and calories, and high in fiber, complex carbohydrates, and other vital nutrients.

The American Dietetic Association has stated that "vegetarians, especially vegans, often have weights that are closer to desirable weights than do nonvegetarians." According to Dr. T. Colin Campbell, an internationally renowned nutrition expert, "The vast majority of all cancers, cardiovascular diseases, and other forms of degenerative illness can be prevented simply by adopting a plant-based diet."

Veggie Bite sounds perfect for busy, health-conscious people who want to make humane food choices. I'm sure owners Sylvia Watycha and Moshe Shalom will have continued success, and hopefully one day they'll open a Veggie Bite in my neighborhood!
